2 lb (1 kg) boneless, skinless chicken thigh fillets

3 large garlic cloves, minced (~3 tsp)

1 tbsp white wine vinegar (or red wine/apple cider vinegar)

3 tbsp lemon juice

1 tbsp extra virgin olive oil

3 tbsp full-fat Greek yogurt

1 ½ tbsp dried oregano

1 tsp salt

Black pepper to taste

2 cucumbers (yielding ½ ¾ cup grated, juice squeezed out)

1 ¼ cups full-fat Greek yogurt

1 tbsp lemon juice

1 tbsp extra virgin olive oil (plus extra for richer taste)

1 garlic clove, minced

¼ tsp salt

Black pepper to taste

3 tomatoes, deseeded and diced

3 cucumbers, diced

½ red Spanish onion, finely chopped

¼ cup fresh parsley leaves (optional)

Salt and pepper to taste

4 6 pita breads or flatbreads

Instructions

1-Prepare the marinade: Prepare the marinade by mixing olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add the chicken thighs to the marinade, coating them well, and refrigerate for at least 30 minutes ideally 3-12 hours for deeper flavor, just like in the full recipe directions.

2-Cook the chicken: Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes on each side until fully cooked and slightly charred.

3-Prepare the tzatziki: While the chicken rests, prepare the tzatziki by halving cucumbers, scraping seeds, grating, and squeezing out excess liquid. Mix with yogurt, lemon juice, olive oil, garlic, salt, and pepper, then let it rest for 20 minutes.

4-Make the salad: Make the salad by combining diced tomatoes, cucumbers, onion, parsley, salt, and pepper.

5-Assemble the gyros: Warm the pita bread briefly on the grill or in a pan, then assemble by layering salad, sliced chicken, and tzatziki. Roll it up and serve immediately!
