Optional: 23 sliced kalamata olives or black olives
1 cup plain Greek yogurt (or plant-based Greek yogurt for dairy-free)
1/2 cup grated cucumber
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon garlic powder
1/4 teaspoon salt (or to taste)
1 tablespoon fresh chopped dill
Instructions
1. Whisk together olive oil, lemon zest, lemon juice, red wine vinegar, garlic powder, oregano, basil, salt, black pepper, and optional red pepper flakes for the marinade.
2. Marinate the chicken breasts in the mixture for at least 30 minutes, or up to several hours.
3. Preheat an air fryer to 380°F. Cook the chicken for about 7 minutes on one side, then flip and cook for another 3-4 minutes until the internal temperature reaches 165°F. Alternatively, cook in a skillet over medium-low heat for 7-8 minutes per side. Allow to rest for 5-10 minutes before slicing.
4. Prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, olive oil, garlic powder, salt, and chopped dill.
5. Cook rice in chicken broth as preferred, seasoning with lemon juice, salt, pepper, and herbs if desired.
6. Assemble the bowls by layering rice or quinoa, vegetables, sliced chicken, and topped with tzatziki sauce. Drizzle with olive oil and lemon juice if desired.
