  • Total Time: 2 hours 25 minutes
  • Yield: Makes approximately 20 gingerbread men macarons

Ingredients

– 100g almond flour

– 100g powdered sugar

– 90g egg whites (about 3 large eggs)

– 50g granulated sugar

– 1 tsp ground ginger

– 1 tsp ground cinnamon

– 1/4 tsp ground cloves

– Gel food coloring (optional)

– 1 1/3 cups sifted confectioners’ sugar (170 grams)

– 4 tablespoons unsalted butter, softened (56 grams)

– 1/2 teaspoon vanilla extract

– 1 1/2 teaspoons molasses

– 1/4 teaspoon ground ginger

– 1/4 teaspoon ground cinnamon

– 1/4 teaspoon nutmeg

– 1 to 2 tablespoons milk, only if needed to thin frosting

– 2 1/2 cups powdered sugar (312 grams)

– 2 tablespoons meringue powder

– 5 to 6 tablespoons water

– Gel food coloring (optional)

Instructions

1-Prepare your workspace: sift almond flour and powdered sugar together to avoid lumps and create a smooth batter. Then, whip egg whites at room temperature until foamy, slowly adding granulated sugar until stiff peaks form; for vegan options, whip aquafaba the same way. Gently fold the dry ingredients into the meringue in batches, ensuring a glossy, flowing batter; adjust if using special ingredients like gluten-free alternatives.

2-Piping and Baking Steps: Transfer the macaron batter into a piping bag and pipe gingerbread men shapes onto parchment-lined baking sheets, tapping trays to release air bubbles.
Let macarons rest at room temperature for 30-60 minutes until a skin forms on top to prevent cracking during baking.
Preheat oven to 150°C (300°F) and bake for 15-18 minutes; monitor closely for dietary modifications to avoid over-baking.
Allow macarons to cool completely before removing from the tray.

3-Prepare the gingerbread buttercream: by creaming softened butter for about one minute, then adding sifted confectioners’ sugar and mixing until fluffy. Incorporate vanilla extract, molasses, and spices, adjusting with milk if needed. For the royal icing, beat powdered sugar, meringue powder, and water on high speed for five minutes, then add food coloring and use for decorating.

4-Assembly and Finishing Touches: Pipe white wave patterns on the hands and legs, then use icing or edible markers to add eyes, mouth, cheeks, and buttons. Finally, assemble by sandwiching the buttercream between shells. This step ensures your macarons not only taste amazing but look like little edible gingerbread figures too.
