🍪 Delight in soft-centered gingerbread cookies with crisp edges and irresistible spice flavors that capture the holiday spirit.
🎄 This easy recipe is perfect for fun family baking, decorating gingerbread men, and creating joyful holiday memories!

  • Total Time: 4 hours 30 minutes
  • Yield: 30 cookies

Ingredients

– 3 and 1/2 cups all-purpose flour forms the cookie structure

– 1 teaspoon baking soda helps the cookies rise slightly and stay tender

– 1/2 teaspoon salt balances sweetness and sharpens flavor

– 1 tablespoon ground ginger gives classic gingerbread warmth

– 1 tablespoon ground cinnamon adds cozy, sweet spice notes

– 1/2 teaspoon ground allspice rounds out the spice blend

– 1/2 teaspoon ground cloves adds bold, aromatic depth

– 10 tablespoons unsalted butter creates richness and smooth dough

– 3/4 cup packed light or dark brown sugar supports chewiness and caramel-like flavor

– 2/3 cup unsulphured or dark molasses (not blackstrap) provides moisture and classic molasses taste

– 1 large egg at room temperature binds ingredients for better texture

– 1 teaspoon pure vanilla extract boosts overall flavor

Instructions

1-First Step: Whisk together the flour, baking soda, salt, and spices in a large bowl. Set it aside so the spices are evenly distributed throughout the dry mixture.

2-Second Step: In a mixer, beat the butter until smooth and creamy. Add the brown sugar and molasses, then beat until everything is well combined and looks thick and glossy.

3-Third Step: Add the egg and vanilla. Beat on high speed for 2 minutes to help the mixture become smooth and evenly blended.

4-Fourth Step: Mix in the flour mixture on low speed until the dough is thick and slightly sticky. Do not overmix, since you want tender cookies.

5-Final Step: Divide the dough into two discs, wrap each in plastic wrap, and chill for at least 3 hours or up to 3 days.

6-Next: Flour a work surface, hands, and your rolling pin. Roll out the dough to 1/4-inch thickness, then cut into shapes and place cookies about 1 inch apart on the sheets.

7-Baking: Bake for 9-10 minutes (adjust for your cookie size). Rotate pans halfway for even baking.

8-Cooling: Cool cookies on the baking sheets for 5 minutes, then transfer to racks. Decorate only once the cookies are fully cooled so icing does not melt.

Notes

❄️ Chill the dough thoroughly for at least 3 hours to prevent spreading and make rolling easier.
🌾 Use plenty of flour on your work surface, hands, and rolling pin as the dough is sticky.
⏲️ Adjust baking time slightly based on cookie size and desired texture – shorter for soft, longer for crisp.
