Ingredients

– 2 ¼ cups (292g) all-purpose flour, spooned and leveled

– 1 tablespoon cornstarch (optional, for tenderness)

– 1 teaspoon baking powder (or ½ teaspoon baking soda as an alternative)

– ¼ to ½ teaspoon salt

– ¾ cup (180g) unsalted butter, melted and cooled or softened

– 1 to 1 ¼ cups (200-250g) granulated sugar

– 1 large egg, room temperature

– 1 teaspoon pure vanilla extract

– 2 tablespoons lemon zest (about 2 lemons)

– ¼ to 3 tablespoons fresh lemon juice (about 1 lemon)

– Optional: 3.4 ounces dry instant lemon pudding mix (for added softness and lemon flavor)

– Optional: ¾ cup white chocolate chips

– ¼ to ½ cup (60-115g) unsalted butter, softened

– 2 to 4 ounces (60-115g) full-fat cream cheese, softened

– 1 ½ to 2 cups (195-260g) powdered sugar

– ¼ to ½ teaspoon salt

– ½ to 1 teaspoon pure vanilla extract

– ¼ to ½ teaspoon lemon zest (optional)

– Optional: 1 tablespoon fresh lemon juice to brighten flavor

– Optional: A splash of milk to adjust consistency

Instructions

1-Preheat your oven to 350°F (175°C). Lightly grease and line a 9-inch springform or round cake pan with parchment paper.

2-In a medium bowl, whisk together the flour, cornstarch (if using), baking powder or baking soda, and salt.

3-In a large mixing bowl, combine softened or melted butter, granulated sugar, and lemon zest. Beat until well mixed and slightly fluffy if using softened butter.

4-Add the egg and vanilla extract, then stir in lemon juice. Note that the dough may appear slightly curdled if pudding mix is added.

5-Gradually fold dry ingredients into the wet mixture until just incorporated; avoid over-mixing to prevent toughness.

6-Fold in white chocolate chips if using.

7-Spread or press the dough evenly into the prepared pan. If the dough is sticky, press a sheet of parchment lightly on top to smooth.

8-Bake for 19-35 minutes depending on pan size, until the edges are golden and the center is set but still slightly soft (longer time applies to thicker cakes).
