Ingredients
2 pounds red potatoes
1 teaspoon salt (for boiling)
12 ounces bacon
1/3 cup apple cider vinegar
1 to 3 tablespoons granulated sugar
1 tablespoon Dijon mustard
1/2 teaspoon salt (for seasoning)
Freshly ground black pepper to taste
1 tablespoon minced fresh garlic
1/2 cup chopped fresh parsley
Instructions
1-Wash and cut potatoes into even pieces, then boil in salted water for 15-20 minutes until tender.
2-Cook bacon until crispy, remove it, and keep the grease in the pot.
3-Add apple cider vinegar, sugar, Dijon mustard, salt, and pepper to the grease and simmer.
4-Mix in minced garlic and cook until golden.
5-Slice potatoes and combine with the warm dressing, then add bacon and parsley.
