Instructions

1-Getting started: Begin by preheating your oven to 400°F to ensure even cooking. Pat the chicken dry with a paper towel, remove the giblets, tuck the wings under the breast, and tie the legs together with kitchen twine for a neat shape.

2-In a bowl: mix the 3 tablespoons melted butter, 1 teaspoon salt, ½ teaspoon pepper, and 1 tablespoon fresh thyme. Rub this mixture all over the chicken, including under the skin, to lock in flavors. Stuff the cavity with the 1 head garlic sliced in half horizontally, ½ onion, and 1 bunch thyme for added aroma.

3-Place the chicken breast side up on a large baking dish and roast until the skin turns golden brown and the internal temperature hits 165°F, about 60 to 75 minutes.
