– 1/3 cup chicken broth or vegetable broth

– 4 tablespoons hoisin sauce

– 2 tablespoons soy sauce or Tamari sauce

– 2 teaspoons cornstarch

– 1/2 teaspoon sesame oil

– 1 teaspoon freshly grated ginger

– 1/2 teaspoon Sriracha sauce (adjust for your spice level)

– 2 tablespoons olive oil, divided

– 8 oz. boneless skinless chicken breasts, cut into cubes

– Salt and black pepper to taste

– 1 red bell pepper, cut into strips

– 1 carrot, cut into strips

– 1/2 red onion, cut into strips

– 1 cup snap peas

– 2 cups sliced mushrooms

– 3 cloves garlic, minced

– 2 zucchini, spiralized into noodles

Instructions

1-Getting started with this garlic chicken zucchini noodles stir fry is as easy as one, two, three! First, whisk together the sauce in a small bowl: mix 1/3 cup chicken or vegetable broth, 4 tablespoons hoisin sauce, 2 tablespoons soy sauce or Tamari, 2 teaspoons cornstarch, 1/2 teaspoon sesame oil, 1 teaspoon freshly grated ginger, and 1/2 teaspoon Sriracha for that kick. Set it aside and get your pan ready for action.

2-Next, heat 1 tablespoon of olive oil in a large pan or wok over medium heat. Add 8 oz. of cubed chicken breasts seasoned with salt and black pepper, and cook for about 4-5 minutes until they’re golden and fully cooked. Pop the chicken on a plate to rest while you move on. This step keeps the chicken juicy and flavorful, making the whole dish come alive!

3-Then, add the remaining 1 tablespoon of olive oil to the pan. Toss in 1 red bell pepper cut into strips, 1 carrot cut into strips, 1/2 red onion cut into strips, 1 cup snap peas, 2 cups sliced mushrooms, and 3 cloves of minced garlic. Stir everything constantly for about 4 minutes until the veggies are tender yet still crisp that’s the secret to that perfect crunch. Pour in your sauce and let it thicken for 2-3 minutes, stirring to coat all the goodies.

4-Now, bring the chicken back into the pan and mix it with the veggies and sauce. Finally, add 2 spiralized zucchinis and cook for just 1 minute to coat them evenly. Serve right away for the best taste and texture. If you’re making adjustments, like going vegan, skip the chicken and use tofu instead it’s that simple and keeps the fun going!
