1 ½ to 2 pounds steak (such as sirloin, New York strip, tenderloin, or ribeye), cut into 1-inch bite-sized pieces
½ tablespoon avocado or olive oil
2 teaspoons salt
½ teaspoon freshly ground black pepper
½ teaspoon to 1 tablespoon red pepper flakes (optional, adjust to taste)
2 to 4 tablespoons butter or ghee
6 cloves garlic, minced
¼ cup chopped fresh parsley or other fresh herbs like oregano or thyme
Optional: 1 medium shallot, finely diced
Green onion for garnish
Instructions
1. Pat steak pieces dry and season with salt, black pepper, and red pepper flakes. Ensure even coating.
2. Heat a large skillet, preferably cast iron, over medium-high heat. Add oil until shimmering, then add steak pieces in a single layer. Cook for 3 to 4 minutes, stirring occasionally, until browned. You may need to do this in batches.
3. Remove steak from the skillet and set aside. Reduce heat to medium-low and add butter or ghee. Add minced garlic (and optional shallot if using) and sauté for 1 minute until fragrant.
4. Return steak to the skillet and stir to coat in the garlic butter sauce. Cook for an additional 1 to 2 minutes.
5. Remove from heat and stir in chopped parsley. Garnish with green onion and serve immediately.
