Ingredients
2 boneless, skinless chicken breasts, cubed
3 tbsp butter
1 tbsp olive oil
4 cloves garlic, minced
1 tsp paprika
1 tsp Italian seasoning
Salt and pepper to taste
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
8 oz of pasta (your choice)
Fresh parsley, for garnish
Optional: Extra garlic butter for drizzling
Instructions
1. Boil salted water and prepare pasta until al dente. Reserve 1/4 cup pasta water, drain, and set aside.
2. Heat olive oil in a large pan over medium heat. Add cubed chicken, seasoning with paprika, Italian seasoning, salt, and pepper. Sauté for 6-8 minutes until golden brown and thoroughly cooked. Remove chicken and set aside.
3. In the same pan, reduce heat and add 2 tbsp butter. Add minced garlic and sauté for 1-2 minutes until fragrant. Coat the chicken with this garlic butter mixture and remove from heat.
4. In a separate pan, melt remaining 1 tbsp butter over medium heat. Sauté garlic briefly, then stir in heavy cream and chicken broth. Simmer gently and whisk in Parmesan cheese until the sauce thickens smoothly, about 3-4 minutes. Add salt and pepper to taste.
5. Toss the cooked pasta in the creamy Parmesan sauce. Add reserved pasta water if the sauce becomes too thick. Top with garlic butter chicken bites.
6. Garnish with freshly chopped parsley and drizzle with extra garlic butter if desired. Serve hot.
