Ingredients

– 10 tablespoons (145g) unsalted butter

– 1 ¼ cups (250g) granulated sugar

– 3/4 cup plus 2 tablespoons (75g) unsweetened cocoa powder (natural, Dutch-processed, or raw cacao)

– 1 teaspoon vanilla extract

– 1/4 teaspoon fine sea salt

– 2 large cold eggs

– 1/2 cup (65g) all-purpose flour (spooned and leveled; gluten-free flour blends can be substituted)

– 2/3 cup (80g) optional chopped walnuts, pecans, or chocolate chips

Instructions

1-Preheat oven to 325°F (162°C). Line an 8-inch square baking pan with parchment paper or foil, leaving an overhang for easy removal.

2-Melt butter in a medium saucepan over medium-low heat; avoid browning.

3-While butter is still hot, stir in sugar, cocoa powder, vanilla extract, and sea salt until well combined. The batter may appear a bit gritty.

4-Let the mixture cool for 5 to 10 minutes until warm but not hot.

5-Add cold eggs one at a time, stirring vigorously after each addition to fully incorporate.

6-When the batter is thick and glossy, add the flour and mix with a spoon, about 40 to 50 strokes, until just thickened without over-mixing.

7-Fold in nuts or chocolate chips if desired.

8-Spread the batter evenly in the prepared pan, pushing it into the corners.

9-Bake for 20 to 30 minutes until the edges appear dry and the center is slightly underbaked; a toothpick inserted should come out with moist crumbs, not clean this ensures a fudgy center.

10-Cool the brownies completely before removing them from the pan to allow them to set properly. For cleaner slices, chill the brownies for 1 to 2 hours.
