Instructions
1-Combine chopped strawberries, granulated sugar, and a splash of water or lemon juice in a small heavy-bottomed saucepan.
2-Cook over medium-low to medium heat, stirring occasionally until strawberries reduce to about 1/4 cup with a thick, jam-like consistency, approximately 15 to 30 minutes. For a smoother texture, puree the strawberries before or after cooking; straining seeds is optional.
3-Let the strawberry mixture cool completely; using warm strawberry jam can cause the frosting to be runny. Refrigerate if needed.
4-In a large bowl, beat softened butter and cream cheese together on high speed until creamy and lump-free.
5-Add the cooled strawberry reduction, vanilla extract, and salt if using. Mix until combined.
6-Gradually add sifted powdered sugar, one cup at a time, beating until the frosting reaches a smooth, creamy, spreadable or pipeable consistency. Adjust thickness by adding more powdered sugar or a splash of milk or lemon juice if needed.
7-If the frosting is too soft, chill it in the refrigerator for 20 to 60 minutes to firm up before using.
