– 1.25 kg white potatoes, peeled and cut into 4 cm pieces

– 1 clove garlic, thinly sliced
– 40 g French onion soup mix
– 375 ml boiling water
– 2 sprigs fresh rosemary
– 15 ml extra virgin olive oil
– 2 brown onions, finely sliced
– 15 ml brown sugar

Instructions
1- In a large roasting pan, combine the potatoes, butter, and garlic. Toss everything well to coat the potatoes evenly.
2- Sprinkle the French onion soup mix over the top and pour in the boiling water. Add the rosemary sprigs, then season with salt and pepper to taste.
3- Bake for 30 minutes, remembering to stir halfway through for even browning.
4- While the potatoes bake, heat the olive oil in a pan over medium-low heat. Add the onions and cook for 10 minutes until soft.

6- After the initial bake, scatter the caramelized onions around the potatoes in the pan.
7- Bake for an additional 5 to 10 minutes, or until the potatoes are tender. Remove the rosemary sprigs before serving and garnish with fresh rosemary.
