Boneless, skinless chicken breasts or thighs
BBQ seasoning
1 cup ketchup
1/2 cup red pepper jelly
2 tablespoons sugar
1/4 cup apple cider vinegar
1 tablespoon onion powder
1 tablespoon garlic powder
1/2 teaspoon cayenne pepper
1/2 cup whiskey (cinnamon-flavored, plain, apple, or maple)
Optional: Liquid smoke or honey
Instructions
1. In a saucepan, whisk together ketchup, red pepper jelly, sugar, cider vinegar, onion powder, garlic powder, cayenne pepper, and whiskey.
2. Bring the mixture to a boil over medium heat. Reduce the heat and simmer until the sauce slightly thickens, about 10 minutes.
3. Season chicken with BBQ seasoning.
4. For grilling: Preheat grill to medium-high. Cook seasoned chicken for about 4-5 minutes on each side or until nearly cooked through. Baste with the whiskey glaze and continue grilling until the internal temperature reaches 165ยบF.
5. For slow cooking: Place chicken and sauce in a slow cooker. Cook on high for 3-4 hours or until chicken is fully cooked.
6. For baking: Preheat oven to 375ยบF. Place chicken and sauce in a baking dish and bake for 30 minutes or until the chicken reaches an internal temperature of 165ยบF.
7. Serve chicken with extra sauce on the side for dipping.
