Instructions

1-First, preheat your oven to 350 degrees F and grease a mini muffin pan to ensure the bites come out easily. Melt the 85 grams of bittersweet chocolate with the 150 grams of neutral oil over simmering water, then let it cool a bit. In a large bowl, beat the 200 grams of granulated sugar, 142 grams of brown sugar, 3 room temperature eggs, and 2 teaspoons of vanilla extract on high speed for 5-6 minutes until the mixture gets fluffy and doubles in size.

2-Next, slowly add the cooled chocolate and oil mix on low speed to combine everything well. Then, stir in the 120 grams of all-purpose flour, 63 grams of dutch process cocoa powder, 21 grams of black cocoa powder, 28 grams of espresso powder, and ½ teaspoon of salt until it’s mostly mixed. Gently fold in the 127 grams of roughly chopped bittersweet chocolate to keep the batter fudgy.

3-Filling and Baking: Fill each mini muffin cup about ¾ full with the batter for even baking. Pop them in the oven and bake for 15-18 minutes, or until a toothpick comes out with moist crumbs. Let them cool in the pan for a few minutes before you remove them. This step-by-step approach, with a total prep time of 30 minutes and baking time of 15 minutes, makes it a quick treat.
