Instructions

1-In a large pan, melt the fat (butter or pan drippings) over medium heat.

2-Gradually add the flour, one tablespoon at a time, while whisking continuously to create a smooth mixture.

3-Slowly pour in the broth, about one cup at a time, while continuing to whisk to avoid lumps.

4-Stir constantly over medium heat until the gravy reaches the desired thickness. If it thickens too much, add more broth as needed.

5-Taste and adjust seasoning with salt, pepper, and poultry seasoning if desired, noting that poultry seasoning works well when using butter.
