  • Total Time: 50 minutes
  • Yield: 36 cookies

Ingredients

– 1 small package of chocolate Easter eggs in a candy shell for the signature “egg center” surprise

– 1/2 cup butter at room temperature for richness and a soft, chewy cookie texture

– 1 cup sugar for sweetness and helping the dough cream properly

– 1 egg for structure and moisture

– 1 1/2 teaspoons vanilla for warm, sweet flavor

– 2 cups flour for the dough base and cookie structure

– 1/4 teaspoon baking soda for gentle lift and tender crumb

– 1/4 teaspoon salt to balance sweetness and enhance flavor

– 2 tablespoons milk for moisture to keep the dough soft

– Additional sugar for rolling the dough for the lightly sparkly, slightly crisp outer layer

Instructions

1-First Step: Preheat your oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper so your Easter Egg Sugar Cookies release easily.

2-Second Step: Cream together 1/2 cup butter at room temperature and 1 cup sugar in a mixer until the mixture looks lighter and smoother.

3-Third Step: Add 1 egg and 1 1/2 teaspoons vanilla. Mix until well blended, scraping down the bowl if needed.

4-Fourth Step: In a separate bowl, whisk together 2 cups flour, 1/4 teaspoon baking soda, and 1/4 teaspoon salt.

5-Fifth Step: Add the flour mixture alternately with 2 tablespoons milk to the butter mixture, mixing until well blended. If you are using soy milk, use it 1:1 as a direct substitute.

6-Final Step: Shape the dough into 1-inch balls and roll each one in additional sugar. Place dough on the baking sheet without pressing down.

7-Seventh Step: Bake at 350°F for 10 to 12 minutes, just until the edges are lightly browned.

8-Eighth Step: Remove the tray from the oven and let cookies cool for 2 to 3 minutes. This short rest helps the centers set so the Easter eggs don’t crack.

9-Ninth Step: Press 3 small chocolate Easter eggs into the center of each cookie. Do this gently and evenly.

10-Tenth Step: Allow cookies to cool completely on a wire rack before storing or serving.
