Instructions

1-First Step: Make the cream cheese spread Add 1/2 cup cream cheese, 1/2 cup shredded Double Gloucester or sharp cheddar cheese, 2 tablespoons heavy cream, and 1/4 teaspoon coarse salt to a food processor. Blend until smooth and creamy. If the mixture seems too thick, pulse again until it spreads easily.

2-Second Step: Mix the garlic spread In a separate bowl, combine 1 cup mayonnaise, 1 1/2 teaspoons minced garlic, and 1/2 teaspoon coarse salt. Stir until the garlic is evenly mixed through the mayo. This spread is what gives the bread that rich, savory flavor and helps it brown in the skillet.

3-Third Step: Build the sandwich layers Lay out the 8 slices artisan bread on your counter. Place 2 slices medium cheddar cheese on 4 bread slices and 2 slices provolone cheese on the other 4 bread slices. Then divide the cream cheese spread among the provolone halves and top them with the cheddar halves. Press gently so the filling sticks together.

4-Fourth Step: Heat the skillet Set a skillet over medium heat. A non-stick skillet or cast iron skillet both work well. If you like, you can also use a griddle or a panini press. The pan should be warm before the sandwiches go in, but not smoking hot. Too much heat can burn the bread before the cheese melts.

5-Fifth Step: Spread and cook Spread the garlic mayonnaise mixture on the outside of each bread slice. This is the side that should touch the pan. Place the sandwiches in the skillet and cook for about 2 minutes per side. Flip carefully with a spatula and keep an eye on the color. You want a deep golden brown crust and melted cheese inside.

6-Final Step: Slice and serve Once the sandwiches are crisp and the cheese is fully melted, remove them from the skillet and let them rest for a minute. Slice and serve right away while the cheese is stretchy and hot. The full recipe takes about 26 minutes total, with 10 minutes prep time and 16 minutes cook time.
