  • Total Time: 1 hour 22 minutes
  • Yield: 24 rolls 1x

Ingredients

Scale

45 cups all-purpose flour for forming the base of your dough, giving it structure and that classic bread feel

2 tablespoons rapid rise instant yeast for getting the dough rising quickly, so your rolls are ready in no time

⅓ cup granulated sugar for adding just the right sweetness to balance flavors and help the yeast work its magic

1 teaspoon salt for bringing out all the tastes and keeping the dough from being bland

1½ cups warm milk for providing moisture and helping activate the yeast without killing it

5 tablespoons softened butter for mixing in for a rich, tender crumb

1 large room temperature egg for binding everything together and adding a touch of richness

2 tablespoons melted butter for creating that shiny, golden top and keeping the rolls moist and flavorful

1½ cups almond or oat milk for providing moisture and helping activate the yeast without killing it

1 tablespoon ground flaxseed mixed with 3 tablespoons water for binding everything together and adding a touch of richness

45 cups gluten-free blend for forming the base of your dough, giving it structure

¼ cup sugar for adding just the right sweetness to balance flavors

1½ cups low-fat milk for providing moisture and helping activate the yeast without killing it

Instructions

First Step: In your stand mixer fitted with a dough hook, combine 3 cups of the all-purpose flour, 2 tablespoons of rapid rise instant yeast, ⅓ cup granulated sugar, 1 teaspoon salt, 1½ cups warm milk (make sure it’s at 100-110°F), 5 tablespoons softened butter, and 1 large room temperature egg. This initial mix brings everything together without a mess.

Second Step: Turn the mixer to low speed until all the ingredients are just incorporated, then crank it up to medium speed for about 2 minutes. You’ll see the dough start to come together nicely, which is that satisfying moment when you know you’re on track.

Third Step: Gradually add the remaining 1-2 cups of flour, a little at a time, until the dough forms a slightly sticky ball that pulls away from the side of the bowl. Don’t overdo it you want it tacky, not dry, for the best rise later on.

Fourth Step: Cover the dough with a clean towel or plastic wrap and let it rise in a draft-free spot for 30 minutes. This resting time is crucial for that fluffy texture, so find a warm, quiet place like the top of your fridge.

Fifth Step: Once risen, punch down the dough to release the air, then divide it into 24 equal portions aim for about 2 ounces each for uniform rolls. Pat the dough into an 8×12 inch rectangle on a floured surface and cut it into even pieces for easy shaping.

Sixth Step: Shape each portion into a smooth roll by pulling the seams downward, then place them on a greased baking sheet. Make sure they’re spaced out so they have room to puff up during the next rise.

Seventh Step: Cover the rolls again and let them rise for another 30 minutes in that same draft-free spot. This double rise is what gives them that incredible softness inside.

Eighth Step: Preheat your oven to 375°F and bake the rolls for 12-15 minutes, checking at 12 minutes to see if they’re golden brown. If they’re browning too fast, tent them with foil to keep the tops from getting too dark.

Final Step: As soon as they come out of the oven, brush the hot rolls with 2 tablespoons of melted butter for that signature shine and extra flavor. Serve them warm, and watch how they steal the show at your table!
