Ingredients
– ½ pound medium shell pasta (about 3 cups)
– ¾ cup sliced dill pickles
– ⅔ cup diced cheddar cheese
– 3 tablespoons minced fresh white onion (use white papery skin onions for milder flavor)
– 2 tablespoons chopped fresh dill
– ½ cup dill pickle juice for soaking pasta
– ⅔ cup mayonnaise for the dressing
– ⅓ cup sour cream for the dressing
– ⅛ teaspoon cayenne pepper for the dressing
– 4 tablespoons dill pickle juice for the dressing
– Salt and black pepper to taste for the dressing
Instructions
1-Boil ½ pound medium shell pasta until al dente according to package directions, then rinse under cold water to stop the cooking process.
2-Toss the cold pasta with ½ cup dill pickle juice and let it sit for 5 minutes; afterward, drain and discard the pickle juice to infuse that tangy flavor.
3-In a small bowl, mix ⅔ cup mayonnaise, ⅓ cup sour cream, ⅛ teaspoon cayenne pepper, 4 tablespoons dill pickle juice, and salt and black pepper to taste until well combined for the dressing.
4-In a large bowl, combine the drained pasta, ¾ cup sliced dill pickles, ⅔ cup diced cheddar cheese, 3 tablespoons minced fresh white onion, and 2 tablespoons chopped fresh dill, then add the prepared dressing and mix thoroughly.
5-Refrigerate the salad for at least 1 hour before serving to let the flavors meld perfectly.
