Ingredients
– 2 ½ cups unsalted nuts of choice (suggested: ¾ cup cashews, ¾ cup peanuts, 1 cup almonds)
– ½ cup puffed rice (brown or regular)
– ¼ cup brown rice syrup (can substitute honey or maple syrup)
– 1 ½ teaspoon vanilla extract
– ½ teaspoon sea salt
– 1 cup dark chocolate chips (can use semisweet or milk chocolate)
– 2 teaspoons coconut oil
– flaky salt for topping
Instructions
1-Preheat oven to 325˚F / 160˚C. Spread nuts in a single layer on a rimmed baking sheet and roast for 5-8 minutes until fragrant and lightly browned.
2-Line an 8×8-inch pan with parchment paper.
3-In a large bowl, combine roasted nuts and puffed rice.
4-Microwave brown rice syrup for 30 seconds to loosen. Whisk in vanilla extract and ½ teaspoon sea salt. Pour over nut mixture and stir to coat evenly.
5-Transfer mixture to the prepared pan, pressing into an even layer.
6-Bake for 18-20 minutes. Remove from oven and cool about 30 minutes. Transfer to a cutting board, slice lengthwise in half, then cut each half into 5-6 thin bars. Let cool completely.
7-Microwave chocolate chips and coconut oil in 30-second intervals, stirring between, until fully melted. Dip bottoms of bars into melted chocolate, place on parchment-lined sheet. Drizzle tops with remaining chocolate and sprinkle with optional flaky salt. Refrigerate until chocolate is set.
