Instructions

1- In a large bowl or mixer, combine the 3.25 cups flour, 1 teaspoon sea salt, and 2 teaspoons yeast. Mix well to blend everything evenly.

2- Add 1.5 cups warm water and stir until a soft, sticky dough forms. Don’t worry if it feels messy; that’s what makes the bread airy!

3- Cover the bowl loosely with plastic wrap and a tea towel. Let the dough rise at room temperature for 2 to 3 hours, or until it doubles in size.

4- Dust a counter lightly with flour. Turn the dough out onto the surface and flour your hands to handle it easily.

5- Gently fold the dough into a round ball without kneading. Use a sharp knife to make an X or a few slashes on top.

6- Place the shaped dough onto a floured pizza peel, piece of cardboard, or parchment paper. Let it rest while the oven preheats.

7- Preheat oven to 450Β°F (230Β°C). Put a pizza stone inside for about 45 minutes and add an ovenproof dish with 2 inches of water on the bottom rack for steam.

8- Sprinkle the hot pizza stone with semolina or cornmeal. Slide the loaf onto the stone and bake for 30 to 45 minutes until golden brown and hollow-sounding.

9- Transfer the bread to a cooling rack and let it cool completely before slicing. Or, cool it in the turned-off oven with the door slightly ajar for extra crispness.
