2 pounds boneless skinless chicken breasts
2 cups salsa (spice level as desired)
1 (15-oz) jar queso dip
1 teaspoon chili powder
1 teaspoon paprika (plain or smoked)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon cumin powder
4 ounces cream cheese, cut into pieces
1 ounce taco seasoning (optional)
1 (10-oz) can Rotel diced tomatoes and green chilies (optional)
Optional: tortillas, sour cream, shredded cheese, tomatoes, olives, lettuce, jalapenos, onions, cilantro

Instructions

1. Place the chicken breasts in a crockpot and pour the salsa and queso dip on top.
2. Sprinkle with chili powder, paprika, garlic powder, onion powder, and cumin. Optionally, add taco seasoning and Rotel tomatoes and green chilies.
3. Gently stir the spices into the top layer without disturbing the chicken too much.
4. Place the cream cheese pieces on top of the mixture.
5. Cover and cook on high for 2½ to 4 hours or on low for 4 to 7 hours until the chicken is tender and fully cooked.
6. Remove the chicken from the crockpot, shred it with two forks or an electric mixer, and return it to the pot.
7. Stir in the melted cream cheese and blend the mixture well with the shredded chicken.
8. Serve warm with tortillas, hard taco shells, or as a dip with tortilla chips, adding favorite toppings like sour cream, lettuce, and more.
