Ingredients

– 2 pounds (about 900 grams) boneless skinless chicken breasts

– 1 can (14.5 oz or approximately 411 grams) petite diced tomatoes with green chilies

– 3 bell peppers (preferably one each of red, yellow, and green), cored and sliced

– 1 large yellow onion, halved and sliced

– 4 cloves garlic, minced

– 2 1/2 teaspoons chili powder

– 2 teaspoons cumin

– 1 teaspoon paprika

– 3/4 teaspoon coriander (or substitute oregano)

– 1 teaspoon salt

– 3/4 teaspoon pepper

– 2 tablespoons fresh lime juice

– 1 tablespoon honey (optional)

– Twelve six-inch flour tortillas (for serving)

– Optional toppings: Cilantro, sour cream, salsa, guacamole or sliced avocados, and shredded Mexican cheese

Instructions

1-First, pour half of the diced tomatoes into the bottom of a 6 or 7-quart slow cooker and spread them evenly for a flavorful base. Next, layer half of the sliced bell peppers and onions on top, then sprinkle with the minced garlic to build layers of taste. Place the chicken breasts over the vegetables for even cooking, and in a separate bowl, mix the chili powder, cumin, paprika, coriander, salt, and pepper.

2-Sprinkle half of the seasoning over one side of the chicken, flip the breasts, and add the rest of the seasoning for full coverage. Then, add the remaining diced tomatoes, followed by the rest of the bell peppers and onions. Cover and cook on high for 2 to 3 hours or on low for 4 to 6 hours until everything is tender.

3-Once done, remove the chicken and cut it into strips or shred it easily. Ladle out one cup of the broth from the slow cooker and discard the rest to avoid excess liquid. In a small bowl, whisk the lime juice and honey together, then add this mixture back into the slow cooker with the chicken, tossing gently to combine.

4-Optionally, stir in chopped cilantro and serve warm in the tortillas with your choice of toppings.

5-Gather and prep all ingredients like slicing peppers and onions.

6-Place chicken at the bottom for even cooking.

7-Add vegetables and seasonings in layers.

8-Cook on low or high based on your schedule.

9-Shred chicken and mix in lime juice before serving.
