Ingredients

5 large egg yolks [Thickens and enriches]

3/4 cup (150g) granulated sugar, divided [Sweetens and caramelizes]

3 cups (720ml) heavy cream or heavy whipping cream [Provides creamy base]

1/2 teaspoon espresso powder (optional)

1/4 teaspoon salt

1 1/2 teaspoons pure vanilla extract

Instructions

1- First, preheat the oven to 325°F (163°C). Whisk the 5 large egg yolks with 1/2 cup (100g) of the granulated sugar and set aside. Heat the 3 cups (720ml) heavy cream along with 1/2 teaspoon espresso powder (if using) and 1/4 teaspoon salt until it begins to simmer, then remove from heat and stir in the 1 1/2 teaspoons pure vanilla extract.

2- Temper the egg yolks by gradually whisking in about 1/2 cup of the warm cream, then combine the tempered egg mixture with the remaining cream. Pour the custard evenly into the 8 shallow ramekins placed in a large baking pan. Add hot water to the pan to reach about 1/2 inch deep and bake for around 35 minutes, checking from 30 minutes on, until the edges are set and the centers jiggle slightly or reach 170°F (77°C).

3- After baking, cool the ramekins in the pan, then chill in the refrigerator, loosely covered, for at least 4 hours and up to 2 days.

4- Before serving, sprinkle the remaining sugar on top and caramelize it using a kitchen torch or oven broiler.
