Ingredients
– 12 oz gluten-free pasta (such as elbow, ziti, penne, shells, tortellini, ravioli, farfalle, bowtie, bucatini, rigatoni, or low-carb pasta)
– 2 tablespoons extra virgin olive oil
– ½ cup chopped onion
– 1 jalapeno
– 2 cups spinach
– 1 cup Alfredo white sauce (homemade or store-bought)
– 7 oz pesto (fresh refrigerated variety recommended)
– ½ tablespoon Italian seasoning
– ½ tablespoon red pepper flakes
– ⅓ cup Parmesan cheese
– 2 balls burrata cheese
– ⅓ cup mozzarella cheese
– 1 cup milk (optional)
– Salt to taste
– Pine nuts (enough to lightly cover the pan for frying)
Instructions
1-First, cook the pasta al dente as per package directions to keep it firm for baking.
2-Then, heat the olive oil in a pan and fry the pine nuts until they’re lightly golden, adding a nutty crunch.
3-Next, toss in the chopped onion and jalapeno, cooking until the onion turns translucent, followed by the spinach which softens in about 2 minutes.
4-Add the pesto and Alfredo sauce, letting them cook for 2-3 minutes to meld the flavors. If the mixture seems dry, stir in about ½ cup milk or pasta water for creaminess.
5-Mix in the cooked pasta, Parmesan cheese, red pepper flakes, Italian seasoning, cracked black pepper, and salt to taste, then remove from heat.
6-Grease a baking dish with butter and spread half the pasta mixture evenly inside. If it’s dry, add ½ cup milk, then top with half the mozzarella cheese and one broken ball of burrata.
7-Bake at 350°F (175°C) for 20 minutes until the edges are golden and cheese is bubbly; cover with foil if needed.
8-Broil for 1-2 minutes for a golden top, then serve immediately.
9-Repeat for the remaining mixture.
