4 tablespoons butter
1 tablespoon oil
2 cups diced onions
4 cloves garlic, minced
1 1/2 pounds fresh brown mushrooms, sliced
4 teaspoons chopped thyme, divided
1/2 cup dry red or white wine
6 tablespoons all-purpose flour
4 cups low sodium chicken broth or stock
1–2 teaspoons salt, to taste
1/2–1 teaspoon cracked black pepper, to taste
2 bouillon cubes, crumbled
1 cup heavy cream or half and half
1/2 tablespoon fresh parsley, chopped for garnish
1/2 tablespoon fresh thyme, chopped for garnish
Instructions
1-Melt 4 tablespoons butter and 1 tablespoon oil in a large pot over medium-high heat. Sautรฉ 2 cups diced onions for 2-3 minutes until softened, then add 4 cloves minced garlic and cook for about 1 minute until fragrant.
2-Add 1 1/2 pounds sliced mushrooms and 2 teaspoons chopped thyme, cooking for 5 minutes. Pour in 1/2 cup dry wine and cook for another 3 minutes to blend the flavors.
3-Sprinkle 6 tablespoons flour over the mixture, stir well, and cook for 2 minutes. Add 4 cups broth, mix again, and bring to a boil.
4-Reduce heat to low-medium, add 1-2 teaspoons salt, 1/2-1 teaspoon pepper, and 2 crumbled bouillon cubes, then cover and simmer for 10-15 minutes, stirring occasionally until thickened.
5-Lower heat and gently stir in 1 cup cream or half and half, heating through without boiling. Adjust seasoning as needed for the perfect taste.
6-Just before serving, mix in the remaining thyme and 1/2 tablespoon chopped parsley. Serve warm, ideally with crusty bread for a complete meal.
