  • Total Time: 1 hour
  • Yield: About 30 bites 1x

Ingredients

Scale

2 packages (8 oz each) cream cheese, softened

3 large avocados, diced small

1 pound bacon, crispy, crumbled

1 cup sharp cheddar cheese, shredded

1 cup pepper jack cheese, shredded

1/2 cup jalapenos, diced (pickled from a jar)

1/2 cup green onions, sliced

1/2 cup cilantro, chopped

1/4 cup red onions, diced

1 teaspoon seasoning salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1 teaspoon lime juice

1 cup all-purpose flour

1 egg

1 cup buttermilk

12 cups bread crumbs

2+ cups oil for frying

Instructions

1-Prepare the Filling: Start by frying the bacon until it’s crispy. Once done, drain it on paper towels, let it cool, and crumble it up. This adds that smoky crunch we all love! Next, beat the softened cream cheese in a large bowl on medium speed for 2-3 minutes until it’s creamy and smooth.

Then, add all the filling ingredients except the diced avocados and mix them well. Gently fold in the diced avocados to keep their texture just right. Cover the mixture with plastic wrap and chill it in the refrigerator for 1 hour. This step helps everything firm up and blend flavors perfectly!

2-Prepare the Coating and Form the Bites: Now, set up your coating station. Place 1 cup of all-purpose flour in one bowl, whisk 1 egg with 1 cup of buttermilk in another, and put 1-2 cups of bread crumbs in a third bowl. Take about 1 tablespoon of the chilled mixture and form it into balls. Here, you can try a similar technique from our fresh cherry jam recipe for shaping, as it keeps things neat and fun!

Roll each ball in the flour, then dip it into the buttermilk and egg mixture, and finally coat it with bread crumbs. Place the coated balls on a baking sheet and flash freeze them for about 1 hour. This trick keeps them from falling apart during frying and makes the process smoother. By linking to our internal guide on shaping, you’ll see how versatile these methods can be!

3-Fry the Bites: Heat the oil in a large cast iron or heavy-bottomed pan over medium heat to 350°F (175°C). Fry about 6-8 balls at a time, turning them frequently, until they’re golden brown, which takes around 2 minutes. Remove them from the oil and drain on a paper towel-lined plate.

Serve them warm with your favorite dipping sauce for extra yum! For a healthier twist, remember you can use an air fryer as an alternative, just like we suggest in our tips section. Making these bites is not only simple but also a great way to get creative in the kitchen, especially for busy parents or working professionals looking for quick meals.
