Ingredients

– Two packets (3 ounces each) of cherry gelatin

– 1 1/2 cups of boiling water

– 20 ounces of crushed pineapple with juice

– One can (15 ounces) of whole cranberry sauce

– 3/4 cup of chopped pecans

– 3/4 cup of cranberry or apple juice

– 8 ounces of softened cream cheese for the topping

– 1/2 cup of powdered sugar for the topping

– 1 cup of sour cream for the topping

– 1/4 cup of chopped pecans for sprinkling on top

Instructions

1-Prepare ingredients: Measure out two packets (3 ounces each) of cherry gelatin, 1 1/2 cups of boiling water, 20 ounces of crushed pineapple with juice, one can (15 ounces) of whole cranberry sauce, 3/4 cup of chopped pecans, and 3/4 cup of cranberry or apple juice.

2-Dissolve gelatin: Stir the cherry gelatin into the boiling water until fully dissolved for a smooth base.

3-Mix in fruits and nuts: Add the crushed pineapple, cranberry sauce (breaking up chunks), chopped pecans, and juice, stirring well.

4-Refrigerate: Pour into a 9×13-inch dish and chill for two hours until set.

5-Make the topping: Beat 8 ounces of softened cream cheese, then add 1/2 cup of powdered sugar and 1 cup of sour cream until combined.

6-Assemble and serve: Spread the topping over the set salad, sprinkle with the remaining 1/4 cup of chopped pecans, and enjoy chilled.
