Instructions

1-Start: by preheating your oven to 400°F (about 204°C) and lining baking sheets with parchment paper for easy cleanup. This step ensures your galettes bake evenly and release without sticking.

2-Next: unroll the pie crusts into circles and place them on the prepared sheets. In a mixing bowl, whip the softened cream cheese, 2/3 cup sugar, 2 egg yolks, and 1 teaspoon vanilla extract until the mixture is smooth and creamy. Spread this filling in the center of each crust, leaving a 1-inch border for folding.

3-Make: the cranberry sauce by boiling 1/2 cup sugar, 1/3 cup water, a pinch of salt, and 8 ounces of fresh cranberries for about 10 minutes until the berries pop and the sauce thickens.
