🥚 Enjoy a flavorful and quick-to-make Coronation Egg salad that’s perfect for sandwiches or as a side.
🍴 This recipe combines creamy eggs with sweet and savory accents for a deliciously unique taste.

  • Total Time: 22 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

6 eggs

1/2 finely chopped onion

1 stick finely chopped celery

35 grams of sultanas

35 grams of finely chopped dried apricots

2 tablespoons of mayonnaise

1 teaspoon of mango chutney

1/4 teaspoon of curry powder

1/4 teaspoon of salt

Instructions

1-First, boil the eggs for 9-12 minutes until they’re hard-boiled, then cool them in ice water to make peeling easier. Once cooled, peel the eggs carefully and mash them in a bowl. This step ensures the eggs blend smoothly with the other ingredients for that creamy texture.

2-Next, mix in the finely chopped onion, celery, sultanas or dried apricots, mayonnaise, mango chutney, curry powder, and salt. Stir everything together until it’s well combined, creating a flavorful filling. This mixture is what gives Coronation Eggs their unique charm.

3-After that, for dietary tweaks, substitute ingredients as needed, like using Greek yogurt instead of mayonnaise for a lighter option. Spoon the mixture back into the egg halves or use it as a salad base. Finally, chill it in the fridge for at least 30 minutes to let the flavors meld together.
