Ingredients

– 1 small green cabbage, shredded and chopped (about 6 cups)

– 1 large carrot, shredded

– 1 cup mayonnaise

– ⅓ cup granulated sugar (raw cane sugar recommended)

– 2 tablespoons apple cider vinegar

– 1 ½ teaspoons fresh lemon juice

– 1 teaspoon salt (adjust to taste)

– ⅛ teaspoon black pepper (adjust to taste)

– 1 cup mayonnaise for creaminess

– 1 small green cabbage

– Shredded purple cabbage for added nutrients and color

Instructions

1-Wash and shred the green cabbage, aiming for about 6 cups.

2-Grate 1 large carrot and add it to the bowl.

3-In a separate bowl, whisk together 1 cup mayonnaise, ⅓ cup granulated sugar, 2 tablespoons apple cider vinegar, 1 ½ teaspoons fresh lemon juice, 1 teaspoon salt, and ⅛ teaspoon black pepper.

4-Pour the dressing over the veggies and toss thoroughly.

5-Taste and adjust seasoning, perhaps adding more vinegar for tang.

6-Refrigerate for at least 30 minutes to let flavors blend.
