2 tablespoons red curry paste
1 can diced tomatoes, 14.5 oz
2 tablespoons soy sauce
1 tablespoon brown sugar
2 teaspoons fish sauce
½ teaspoon ground turmeric
½ teaspoon ground coriander
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
1 can full-fat coconut milk, 14 oz
1 lime, juiced
salt and black pepper, to taste
fresh cilantro, for garnish (optional)

Instructions

Add the peeled and deveined shrimp, then toss gently to ensure they are evenly coated in the spice mixture. Set aside to marinate briefly while preparing the remaining ingredients.
