Instructions
1-First, rinse 1 cup of long-grain jasmine rice under cold water until the water runs clear. This removes excess starch and prevents the rice from sticking. Combine the rinsed rice with 1.5 cups of water and 1 teaspoon of olive oil in a medium saucepan.

3-Once cooked, uncover and fluff the rice with a fork. Stir in the garlic, scallions, and lime zest while it’s still warm to let the flavors soak in. Let it cool for one minute before adding the remaining 2 teaspoons of olive oil, salt, lime juice, cilantro, and optional red pepper flakes or jalapeño.
