1 cup long-grain jasmine rice, rinsed well and drained

1.5 cups water

3 teaspoons olive oil (divided)

1 clove garlic, finely minced

2 scallions, finely chopped

1 teaspoon lime zest

0.25 to 0.5 teaspoon sea salt

1.5 tablespoons fresh lime juice

0.5 cup finely chopped fresh cilantro

Pinch of red pepper flakes or 0.25 diced jalapeño (optional)

Instructions

1-First, rinse 1 cup of long-grain jasmine rice under cold water until the water runs clear. This removes excess starch and prevents the rice from sticking. Combine the rinsed rice with 1.5 cups of water and 1 teaspoon of olive oil in a medium saucepan.

3-Once cooked, uncover and fluff the rice with a fork. Stir in the garlic, scallions, and lime zest while it’s still warm to let the flavors soak in. Let it cool for one minute before adding the remaining 2 teaspoons of olive oil, salt, lime juice, cilantro, and optional red pepper flakes or jalapeño.

4-Mix everything thoroughly and taste to adjust seasonings. The total time is about 25 minutes, with just 5 minutes of prep. This approach keeps the herbs fresh and vibrant for the best results.
