2 teaspoons baking soda added to sour milk plus an extra teaspoon to vinegar
½ to 1 teaspoon ground nutmeg (for extra warmth)
½ cup (65g) powdered sugar
½ tablespoon heavy cream or milk
Butter-orange icing made with 3 cups icing sugar, 1 cup soft butter, orange zest, and orange juice; chill and shape as desired
Instructions
1-Preparing the Dough: Whisk together the flour, baking powder, cinnamon, ginger, allspice, cloves, and salt in a medium bowl and set aside.
In a separate large bowl, cream the butter and brown sugar until light and fluffy.
Add molasses and vanilla extract (include egg if desired) to the butter mixture and mix well.
Gradually fold in the dry ingredients until the dough is smooth and streak-free. If the dough is sticky, chill for 15-20 minutes to improve handling.
2-Shaping the Cookies: Line a baking sheet with parchment paper.
Portion the dough using measuring spoons: one tablespoon for the body, one teaspoon for the head, and four half-teaspoons for the arms and legs per cookie. Roll each portion into smooth balls.
Arrange dough balls on the baking sheet in the shape of gingerbread men, gently pressing pieces to adhere. Leave about 2 inches between cookies.
Freeze the assembled cookies for 10-15 minutes to firm up.
3-Baking and Decorating: Preheat oven to 350°F (175°C).
Bake cookies for 13-17 minutes until puffed, the surface is no longer shiny, and bottoms are lightly browned.
Let cookies cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
Prepare icing by mixing powdered sugar with heavy cream or milk until thick but spreadable.
Decorate fully cooled cookies as desired, using plain or alternative icings.
