Instructions
- Step 1: Prepare Ingredients – Rinse and drain the black beans and corn. Dice the red onion, bell pepper, and jalapeño into small pieces. Chop the cilantro and dice the avocado, adding it last to avoid browning.
- Step 2: Combine Ingredients – In a large mixing bowl, gently mix together the black beans, corn, diced tomatoes, red onion, bell pepper, jalapeño, and cilantro.
- Step 3: Dress the Salad – Whisk together olive oil, lime juice, cumin, salt, and pepper in a small bowl. Pour over the salad mixture and toss gently to coat.
