– 3 ripe large bananas

– 5 tablespoons unsalted butter

– 1 cup dark chocolate chips

Instructions

1-First, preheat your oven to 350 degrees Fahrenheit and prepare a muffin tin by spraying it with non-stick spray. This ensures your muffins don’t stick and come out easily once baked.

2-Next, mash the 3 ripe large bananas and cook them in a pan with 5 tablespoons unsalted butter and 1/2 cup packed dark brown sugar over medium heat.

3-Whisk the ingredients together, lower the heat, and simmer for about 5 minutes before removing from heat to cool slightly. In a large bowl, whisk together 2 cups all-purpose flour, 1 1/2 cups sugar, 1/2 cup unsweetened cocoa powder, 2 teaspoons baking powder, 2 tablespoons chia seeds, and 1/2 teaspoon salt.

4-Mixing the Wet Ingredients: In another bowl, mix 2 large eggs, 1/4 cup melted coconut oil or vegetable oil, 1/3 cup milk, and 1 teaspoon vanilla extract. Whisk the cooled banana mixture into this wet mix until well combined. Gently fold the wet ingredients into the dry ones, being careful not to overmix, then stir in 1 cup dark chocolate chips.

5-Scoop the batter into the muffin cups, filling them about three-quarters full, and add extra chocolate chips on top if you like. Bake for 25 to 30 minutes, or until a toothpick comes out clean. Let them cool for a few minutes before enjoying, perhaps with a spread of nut butter for extra flavor.
