Ingredients

– 1 lb. sweet potato

– 1/2 cup frozen corn kernels

– 1 15oz. can black beans

– 1 whole chipotle pepper in adobo sauce

– 1/2 cup cornmeal (divided)

– 1/4 teaspoon garlic powder

– 1/2 teaspoon ground cumin

– 1/2 teaspoon salt

– 1/4 bunch fresh cilantro (optional)

– 1 tablespoon cooking oil for frying

– 4 wheat rolls

– 1 avocado

– 1/4 cup mayonnaise (optional)

Instructions

1-Getting Started with Sweet Potatoes: First, wash the sweet potato and poke it several times with a fork. Cook it in the microwave on high for 5 to 8 minutes until soft, or bake it at 400 degrees Fahrenheit for 45 to 60 minutes. This step brings out the natural sweetness that forms the base of your Chipotle Black Bean Sweet Potato Burgers.

2-Preparation of Other Ingredients: While it cools, prepare the other ingredients. Combine the 1/2 cup frozen corn kernels, drained and rinsed black beans from the 15oz. can, chopped fresh cilantro from the 1/4 bunch (if using), half of the 1/2 cup cornmeal, 1/4 teaspoon garlic powder, 1/2 teaspoon ground cumin, 1/2 teaspoon salt, the 1 whole minced chipotle pepper in adobo sauce, and about 1 teaspoon of adobo sauce in a bowl.

3-Mixing and Shaping the Patties: Once the sweet potato is cool, scoop out the flesh and add it to the mixture. Mix everything together and slightly mash the beans. Chill the mixture for 30 minutes to help it hold together better.

4-Shaping the Patties: Shape it into four or six patties, each about 3/4 inch thick, and coat the outside with the remaining half of the 1/2 cup cornmeal. This coating adds a nice crunch to your Chipotle Black Bean Sweet Potato Burgers.

5-Cooking Your Burgers: For skillet cooking, heat 1/2 tablespoon of the 1 tablespoon cooking oil over medium heat and cook the patties for 5 minutes per side until golden, handling them carefully.
