Instructions

1-First, heat the olive oil in a large pot over medium-high heat. Add the chopped onion and sauté for 5-7 minutes until it’s softened or lightly browned, building a flavorful base for the soup. Next, stir in the celery, carrots, garlic, and Italian seasoning, cooking for a few more minutes to let the aromas blend.

2-Pour in the chicken broth and bring it to a boil, then reduce the heat to a rapid simmer. Let the vegetables cook for about 10 minutes until they’re tender, which helps infuse the broth with natural sweetness and nutrients.

3-Adding the shredded chicken and tortellini into the simmering broth is the fun part cook until the tortellini is done, adjusting the heat to prevent boiling over. Finally, season with salt and pepper to taste, garnish with chopped parsley, and serve immediately for the best flavor and texture.
