Ingredients
5 links of chicken sausage, cut into 1.5-inch pieces
4 boneless, skinless chicken breasts, cut into 1-inch cubes
2 cups bell peppers (red, green, yellow, and orange), cut into 1.5-inch pieces

8 small fresh mushrooms
3 garlic cloves, minced

1 tsp dried oregano (or 1 tbsp fresh)

Salt and pepper to taste
5 wooden skewers, soaked in water
Chopped parsley for garnish
Instructions
1. Soak the wooden skewers in water for at least an hour to prevent burning.
2. In a large bowl, combine chopped bell peppers, onions, mushrooms, and chicken cubes.
3. In another bowl, whisk together oil, red wine vinegar, minced garlic, oregano, garlic powder, smoked paprika, salt, and pepper to create the marinade.
4. Pour the marinade over the chicken and vegetables and mix well. Cover and marinate in the refrigerator for at least 2 hours.
5. Preheat and grease your grill or grill pan. Thread chicken, sausages, peppers, onions, and mushrooms alternately onto the skewers.
6. Grill the skewers, turning occasionally and brushing with any reserved marinade, for 8-10 minutes per side, or until the chicken reaches an internal temperature of 165Β°F.
7. For oven broiling, place skewers on the center rack and cook for 2-3 minutes per side, turning when char appears.
8. Garnish finished skewers with chopped fresh parsley before serving.
