Ingredients

2 cups cooked, chopped or shredded chicken

1/2 cup mayonnaise

1 rib celery, diced

1 green onion, thinly sliced

1 teaspoon Dijon mustard

1/4 teaspoon salt

1/8 teaspoon black pepper

1 teaspoon chopped fresh dill (optional)

1 cup chopped red grapes or peeled, chopped apple

2 tablespoons chopped nuts

Hard-boiled egg, chopped

Pickles

Capers

A splash of jalapeño juice

Instructions

1-Step 1: Prep the Chicken If needed, chop or shred 2 cups cooled cooked chicken. Rotisserie chicken works great for this quick chicken salad.

2-Step 2: Mix the Base In a medium bowl, combine the chicken, 1/2 cup mayonnaise, diced celery, sliced green onion, 1 teaspoon Dijon mustard, 1/4 teaspoon salt, 1/8 teaspoon black pepper, and dill if using. Mix until evenly coated.

3-Step 3: Adjust and Add-Ins Taste and adjust salt, pepper, or mustard. Fold in optional grapes, apple, nuts, chopped hard-boiled egg, pickles, capers, or jalapeño juice.

4-Step 4: Serve It Up Spoon onto bread, rolls, croissants, crackers, over lettuce, or in wraps. Chill briefly for best flavor.
