– 1 large onion, diced
– 3 cups shredded cooked chicken
– 2 (4-ounce) cans diced green chiles

– Black pepper, to taste
– 3 (10-ounce) cans green enchilada sauce
– 2/3 cup sour cream
– 18 corn tortillas, cut in half
– 3 cups grated Monterey Jack cheese (about 12 ounces)
– Fresh cilantro, chopped, for serving
Instructions
1-Preheat the oven: Preheat the oven to 350°F and get your ingredients ready.
2-Cook aromatics: In a skillet, heat 2 tablespoons of canola oil over medium heat. Add 3 finely chopped garlic cloves, 1 seeded and finely chopped jalapeño, and 1 diced large onion, and cook until softened, about 3 minutes.
3-Add chicken mixture: Stir in 3 cups shredded cooked chicken, 2 (4-ounce) cans diced green chiles, 1/2 teaspoon paprika, Kosher salt to taste, and black pepper to taste.
4-Add enchilada sauce: Reserve 1/2 cup of the green enchilada sauce from the 3 (10-ounce) cans, then add the rest to the skillet and mix well. Cook for 1 to 2 minutes until warmed.
5-Stir in sour cream: Turn off the heat and stir in 2/3 cup sour cream.
6-Assemble casserole: Spread the reserved 1/2 cup enchilada sauce in a 9-by-13-inch baking dish. Layer with 12 tortilla halves, then one-third of the chicken mixture, and 1 cup grated Monterey Jack cheese.
7-Layer again: Repeat the layers two more times using the remaining tortillas, chicken mixture, and cheese.
8-Bake and garnish: Bake for 30 to 35 minutes until it’s bubbly and golden. Let it rest for 10 minutes, then add chopped fresh cilantro on top.
