Ingredients

– ½ cup unsalted room temperature butter or soft (not melted) coconut oil

– ⅓ cup dark brown sugar

– ⅓ cup granulated sugar

– ⅓ cup unsulphured blackstrap molasses

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour, spooned and leveled

– 2 teaspoons ground cinnamon

– 1 teaspoon baking soda

– 1 teaspoon ground ginger

– ½ teaspoon ground cardamom (or substitute ¼ teaspoon ground cloves)

– ½ teaspoon fine sea salt

– 1 tablespoon water, plus more if necessary

– ⅓ cup natural cane sugar, for rolling

Instructions

1-Getting ready: preheat your oven to 350°F and line baking sheets with parchment paper to avoid any sticking and make cleanup easy. In a medium bowl, whisk together the flour, ground ginger, baking soda, cinnamon, and salt to blend the spices evenly.

2-Next: in a large bowl, cream the unsalted butter or coconut oil with the brown and granulated sugars until it’s light and fluffy this step really brings out that tender texture. Then, beat in the molasses and vanilla extract until everything mixes well, creating that rich base flavor. Gradually add the dry ingredients to the wet mixture, stirring just until combined, and mix in 1 tablespoon of water to keep the dough moist without making it sticky.

3-Scoop the dough with a 2-inch cookie scoop, roll balls in natural cane sugar, and place them on the baking sheet about 2 inches apart. Gently flatten each ball before sliding them into the oven. Bake for 10 minutes until the cookies spread a bit and show cracks on top, then let them cool on the sheet for 10 minutes before moving to a wire rack.
