– 1 cup long grain white rice
– 3 tablespoons unsalted butter
– 1/2 small onion, diced
– 8 ounces chicken broth
– 8 ounces whole milk
– 1/2 teaspoon paprika
– 1/4 teaspoon salt
– 1/4 teaspoon pepper
– 4 ounces freshly grated sharp cheddar cheese
Instructions
1-Rinse 1 cup of long grain white rice in a fine mesh sieve under running water until the water runs clear, then drain well.
2-In a saucepan over medium heat, melt 3 tablespoons of unsalted butter and sauté 1/2 diced small onion until lightly browned, about 3 to 4 minutes.
3-Add the rinsed rice, 8 ounces chicken broth, 8 ounces whole milk, 1/2 teaspoon paprika, 1/4 teaspoon salt, and 1/4 teaspoon pepper; stir to combine and bring to a simmer.
4-Cover the pan and reduce heat to very low. Cook for 18 to 20 minutes until the rice is tender and most of the liquid is absorbed, without lifting the lid often.
5-Remove from heat and stir in 4 ounces of freshly grated sharp cheddar cheese until melted. Fluff with a fork and serve warm.
