Instructions

1-First: preheat your oven to 400°F and lightly coat a mini-muffin tin with cooking spray or butter to avoid sticking. In a large bowl, mix 2 cups of cooked mashed potatoes with 3 beaten large eggs, 3/4 cup of the grated cheese, 1/4 cup minced fresh chives, and 1/4 cup diced cooked bacon or ham if you like.
