Ingredients

– 4 cups mashed potatoes (preferably not ultra creamy or buttery)

– 2 cups (8 oz) shredded mozzarella cheese

– 1 large egg

– 1/4 cup flour (can increase up to 1/2 cup for creamier potatoes)

– 2 to 3 tablespoons chopped chives (dill or green onions can be used as substitutes)

– 1/2 cup plain bread crumbs

– Light olive oil or canola oil for sautéing

– Sour cream to serve

Instructions

1-Prepare mashed potatoes: Prepare mashed potatoes by boiling peeled quartered russet potatoes in salted water until fork tender. Drain and mash with butter, then allow to cool to room temperature. Mashed potatoes can be prepared 1 to 3 days ahead.

2-Mix ingredients: In a large bowl, mix mashed potatoes, shredded mozzarella, egg, flour, and chopped chives. Mash together to combine. If the mixture is too loose to hold shape, add flour one tablespoon at a time.

3-Form patties: Form the mixture into round patties about one-third inch thick using a tablespoon scoop or hands.

4-Dredge patties: Dredge both sides of each patty in bread crumbs.

5-Cook patties: Heat oil in a large non-stick skillet over medium heat. Cook patties in batches for 3 to 4 minutes per side until golden brown and crispy. Use two skillets to speed up the process if desired.

6-Serve: Serve warm with sour cream.
