Instructions

1-First Step: Prepare the Crust Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated with the butter. Press the mixture firmly into the bottom of an 8×8-inch square baking pan. Use the back of a spoon or a measuring cup to ensure the crust is compact and even. Bake the crust for 10 minutes, then remove from the oven and let it cool while you prepare the filling.

2-Second Step: Prepare the Cheesecake Filling In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the sugar and continue to beat until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until the filling is smooth and lump-free. Be careful not to overmix, as this can incorporate too much air into the filling and cause cracks during baking.

3-Third Step: Pour the Filling and Bake Pour the cheesecake filling over the pre-baked crust, spreading it evenly. Reduce the oven temperature to 325°F (165°C). Bake the cheesecake bars for 35-40 minutes, or until the edges are set but the center still jiggles slightly when the pan is gently shaken. The filling should be pale and slightly puffy around the edges.

4-Fourth Step: Cool and Chill Remove the cheesecake bars from the oven and place the pan on a wire rack. Let the bars cool to room temperature for about an hour. Once cooled, cover the pan and refrigerate for at least 4 hours, or overnight, to allow the cheesecake to set completely. The bars should be firm and cold before cutting.
