20 white button or cremini mushrooms (10 ounces)
1 tablespoon olive oil
1 tablespoon butter
1/2 cup chopped onion (half a medium onion)
2 tablespoons minced garlic (4 to 5 cloves)
2 teaspoons chopped fresh rosemary or thyme
2 ounces shredded cheese (sharp cheddar, mozzarella, Swiss, or a combination)
3 tablespoons breadcrumbs (panko or homemade)
Salt and freshly ground black pepper
1 tablespoon chopped fresh parsley or chives for serving (optional)
Optional: 4 oz. cream cheese, softened
Optional: 1/4 cup finely grated Parmesan, plus more for topping
Optional: Basil, thyme, and wine for additional flavor
Instructions
Preheat oven to 375°F (190°C).
Clean mushrooms gently with a damp paper towel to remove dirt, avoiding over-soaking to prevent sogginess.
Remove stems from mushrooms and finely chop, discarding harder parts. Arrange caps cavity-side-up on a rimmed baking sheet or oven-safe skillet.
In a medium skillet, melt butter over medium heat. Add chopped stems, onions, and a pinch of salt; cook for about 5 minutes until onions are soft.
Add garlic, rosemary or thyme, and optional ingredients such as basil and wine. Cook for another minute until garlic is fragrant and wine is absorbed.
Toast breadcrumbs in the same skillet over medium-low heat for about a minute until lightly golden. Cool slightly.
In a bowl, combine the onion mixture, breadcrumbs, shredded cheese (and optional cream cheese and Parmesan if using), and season with salt and pepper.
Fill mushroom caps with the mixture and sprinkle with additional Parmesan or breadcrumbs as desired.
Bake for 15 to 20 minutes until mushrooms are soft and cheese is melted.
Serve topped with fresh parsley or chives and black pepper.
