Ingredients

– 250 grams fresh carrots (approximately 3 medium carrots)

– 4 to 8 ice cubes or fruit ice (adjust to desired chill and texture)

– ½ inch peeled fresh ginger (optional, adds zest and aids digestion)

– 3 large oranges, peeled, pith and seeds removed (or alternatively 1 cup/240 ml orange juice or coconut water)

– 500 grams fresh, tender carrots (about 1.1 pounds)

– 1 inch peeled fresh ginger (halve or omit for children)

– 3 large oranges

– Optional: celery stalks or cucumbers to enhance freshness and add nutrients

Instructions

Preparation: Preheat the oven to 375°F (190°C).

Mix the dry ingredients: In a large bowl, combine flour, sugar, baking powder, and salt.

Combine wet ingredients: In another bowl, whisk together eggs, milk, and melted butter.

Mix everything: Pour the wet ingredients into the dry ingredients and stir until just combined.

Bake: Pour the batter into a greased baking dish and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool and serve: Let cool slightly before serving.
