Instructions

1-In a 3-quart heavy-bottomed pot, combine 1 cup granulated sugar and 1/4 cup water. Stir lightly to even it out, making sure the sugar stays off the pot sides.

2-Heat over medium until the sugar dissolves and begins to bubble; avoid stirring after this to keep it smooth.

3-If clumps form on the edges, brush them down gently, then cook without stirring until it turns deep golden, about 8-15 minutes.

4-Add the 6 tablespoons of unsalted butter and whisk until melted, watching for rapid bubbling.

5-Remove from heat, then slowly whisk in the 1/2 cup of heavy cream until fully mixed.

6-Whisk in the 1 teaspoon of vanilla and a pinch of salt for the final touch.

7-Let it cool in the pot for 10 minutes before transferring to a jar; store in the fridge and reheat as needed.
